This past weekend my friend Ashley and I made homemade poptarts. We really had no idea what to expect but they actually turned out to be delicious. It is an easy treat to make for a Friday night that only took about 15 minutes! 

Ingredients: poptart
  • 1 whole pre-made pie crusts (they normally can be purchased in a two pack) 
  • 1/2 cup of jam (any flavor; in our picture we did raspberry) 
  • 1 tablespoon cornstarch
  • 1 teaspoon butter
Ingredients: icing
  • 1/2 cup powdered sugar 
  • 1 tablespoon heavy cream 
  • 1 tablespoon of jam
Steps: 
  1. Preheat the oven to 400ºF
  2. Lay the pie crust out on a cutting board and cut the pie into long strips.
  3. Mix together the jam and cornstarch
  4. Put the mixture on the slices of crust
  5. Coat the edges with butter
  6. Crimp the edges together so no jam gets out
  7. Place poptarts in the oven for about 15 minutes 
  8. While the poptarts are in the oven, mix the powdered sugar, heavy cream and jam together that is used for the icing
  9. Once the poptarts are done, spread the icing gently on top and enjoy with a scoop of ice cream!

So excited that fall is here! Although the weather is changing and starting to get more chilly, this is the best time of year to go on adventures! This past week I went to Millstone Creek Orchards and picked apples. At the farm they sold apple cider and homemade donuts which were just amazing. They also had a section of the store set up where you could sample the different types of apples (some of them I have never heard of before!) My favorite was by far the Arkansas Black. I also visited an antique store that was so ascetically pleasing! It is called Salvage Sisters, located down the road from Elon. It was a gold mind for things to put in your dorm or apartment. This past weekend I went to downtown Greensboro, NC. It is such a little cute town. I visited 
BohobluShop Design Archives, and  Only Just Be. They were full of cute clothes and girly trinkets. The pictures below were taken on South Elms Street. 




Bermuda 2017: A couple of weeks ago I went out on a cruise with my mom. Yes, just the two of us!  It was my first time out of the country which was really exciting. Being able to relax by the pool and eat a ton of food was just great and when we got to the island we did everything from boating to snorkeling to kayaking. Here are some pictures that sum up the amazing trip we had together !




Ingredients

1 3/4 cup of flour 
1/4 cup of sugar
2 1/2 teaspoon of baking powder
3/4 teaspoon of salt 
1 beaten egg
1/2 cup of milk
1/3 cup of canola oil
3 ripe bananas
1/2 cup of chopped walnuts 

Preheat the oven to 400 degrees. Mix the dry ingredients
together ( flour, sugar, baking powder and salt). Then in a separate bowl combine the egg, milk and canola oil. After, mix the dry and wet ingredients together. Grease the muffin tins and cook for roughly 10-15 minutes. 
This salad is perfect for the summer season. Easy. Easy. Easy.  I suggest buying most of the ingredients in bulk at a Costco or BJ's because it is cheaper!

Spinach
Strawberries
Goat Cheese
Walnuts
Craisins
Raspberry dressing ( I recommend Marie's dressing )


1.) Take all of these ingredients and combine to make a delicious healthy salad! 










Ingredients 


3 cups of packed basil leaves

2 gloves of garlic
3/4 cup of cubed parmesan cheese
1/2 cup of olive oil
1/4 cup of walnuts
1/2 cup of parsley

Steps

1.) Boil water for pasta and add a pinch of salt
2.) Combine in a blender or food processor.








This past weekend my friend, Sophia and I went to Bethpage Polo at the Park. We have never been to any polo matches so we had no idea what to expect. It was a cool experience and a good excuse to dress up! We set up picnic chairs and brought snacks as we watched the match. It was unexpected but we even got to go over and pet the horses and talk to some of the staff about their jobs.

This past week after I finished my internship I spent two days in Boston with my two friends, Chris and Tamara. We stayed at an Airbnb in Quincy, Massachusetts, right outside of Boston. 
We... 
  • Took a trolley tour around the city (found a great deal on Groupon)
  • Visited the Boston Harbor
  • Visited Harvard Square
  • Walked the path on Castle Island and ate ice cream at Sullivans
  • Attended a game at Fenway Park 
Overall the trip was a blast! We were able to do everything we wanted. The one thing I recommend to anyone staying outside Boston is to take the train into the city and not pay for parking. If you are looking to do a ton of things in the city definitely look in Go Boston passes.
BLT Sandwich

This bacon, lettuce, and tomato sandwich took about fifteen minutes to make. I sliced tomatoes and peeled iceberg lettuce while the bacon sizzled on a griddle.
Then...

I made a simple side salad. In the spinach salad I mixed goat cheese, sliced nectarines and walnuts in a bowl. In another bowl I whisked 4 Tbsps of olive oil, 1 Tbsp of balsamic vinaigrette, a pinch of salt and pepper which was then poured over the salad.

These are some photos that sum up my trip to Orient Point. My cousin and I visited shops in Greenport Village, walked out to the last possible point of Long Island and sat at the beach writing in our journals. Orient was the perfect weekend get away and we were able to get everything in that we wanted to do!


About a week ago I went to a Dierks Bentley concert and had a tailgate in the parking lot. I opted to go to the local grocery store and pick up some food at the salad bar to nosh on. It may not look like a lot but it was filling. This was such an easy way to sit back and relax before going into the stadium. 
I got grapes, chicken salad that we ate with crackers, a summer slaw, mozzarella and mushrooms, strawberries, and sliced cheese! 








A couple of nights ago I went out with my friends to a local restaurant. I wanted to throw on a cute and comfortable outfit that would look effortless.  I put together these items I had in my closet. Most of the items I had in my closet which was very convenient and cheap.
